1 March 2026 | Time: 14.00 Seferihisar
Sevilma – Ercan Baba Olive Oil Mill
On Sunday 1 March, we’ll be meeting at Turkey’s first Slow Food Farm, the Sevilma Garden. Throughout the day, we’ll explore the ancient herb culture of the Aegean and cook the herbs we’ve foraged, pairing them with Sevilma olive oils. In the evening, we’ll set up our table in the unique setting of the Ercan Baba Olive Oil Mill to savour the flavours of the wild herbs we’ve cooked.
In this workshop, we will identify edible wild herbs native to the Aegean region, learn the correct cooking techniques using olive oil, and discover how these herbs can be incorporated into our cooking. On this culinary journey from nature to the table, we will focus not only on recipes but also on seasonality, memory and our connection with nature.
As part of the workshop, we will explore Aegean herbs such as shevketi bostan, arapsaçı, turupotu, mustard greens, goosefoot, radish, poppy, wild chervil, mallow, ivy and foxtail. We will gather most of these herbs together in the Orhanlı Valley, learn about the different species, gain hands-on experience with various cooking methods, and discover how they pair with olive oil. We will share the herbs we have gathered and cooked at the iftar meal we will prepare together that evening.
At every step, we will discover the knowledge of nature and local cuisine that has been passed down from generation to generation.
In our workshop, we will also discover the secrets and varieties of authentic olive oil. We will recall local knowledge, witness Sevilma’s agroecological approach to production and the importance of seasonality, and come together around the theme of good, clean and fair food.
