The Rençber farmers are the ancient farmers who work the soil all day long in the fields, vineyards and gardens, dedicating their labour and sweat to the land. Rençber is not merely a memory of the past; it is an ancient craft that lives on today in the hands of our farmers, who continue to work the soil with love in fields, vineyards and gardens. When the midday break begins in the field, the most sacred ritual for the farmer commences. The ripest tomatoes, peppers and aubergines, still carrying the scent of the embers, are gathered together. The aroma of that dark-coloured sauce, simmering slowly over the fire, mingles with the scent of the earth. When freshly baked, warm bread is dipped into that sauce, all the fatigue gives way to a deep sense of gratitude and strength. That single bite of bread is the most heartfelt union between the earth’s bounty and the labour of the people.

At Sevilma Garden, we have sealed within our jars that unique labour in the fields, the deep respect for the soil, and this living craft that has endured for centuries without waning. Rençber Sauce is not merely a blend of roasted vegetables; it is the story of the earth’s bounty, the sanctity of labour, and that purest of moments when warm bread is dipped into the sauce.

At the Sevilma Olive Grove, which holds the title of Turkey’s first certified Slow Food farm, we carry out our olive cultivation and seasonal farming activities in a truly agroecological spirit. Guided by the principle of “good, clean and fair food”, we have adopted a sustainable production model that preserves biodiversity, is free from chemical pesticides and fertilisers, and relies on living, fertile soil and clean water sources. By sharing the bounty of our orchard with wildlife, we continue to uphold the tradition of “for the wolf, the bird and the plant”.
